The temperature in low-temperature storage is below -20°C, as seafood and cold drinks must be kept below -20°C to prevent spoilage; failing to do so, the seafood's freshness becomes distinctly different. The characteristic of low-temperature storage is that equipment is gradually placed into the cold storage at irregular intervals, and after a period, the temperature inside reaches -20°C. There are no specific requirements for this period, but strict control over the storage temperature is required. A typical low-temperature storage has a temperature range of -18°C to -23°C. However, for cold drinks containing dairy products, the temperature should be set at -20°C to -28°C. But these two different temperatures require different levels of equipment, leading to a significant gap in equipment investment.

Because, when the temperature drops below -15 ℃, the freezing rate of food increases significantly, and microorganisms and enzymes basically cease activity and growth, as well as oxidation.
