Properties:
White powder, easily soluble in water, insoluble in alcohol, relative density 2.45, melting point 890°C, slightly alkaline solution, hygroscopic in air, more stable in solution at 70°C, hydrolyzes into disodium hydrogen phosphate when boiled.
Usage:
(1) Industrial applications include detergency aids, paper bleaching, and electroplating industries; (2) In food processing, it acts as a quality improver, emulsifying dispersant, buffering agent, and chelating agent, with general properties of condensed phosphates. It exhibits significant chelating and dispersing effects, can prevent flocculation; prevents fat oxidation and increases the viscosity of casein. At high pH levels, it inhibits food spoilage and fermentation. Primarily used in meat and seafood processing, it improves water-holding capacity, maintains the freshness and tenderness of the meat, and stabilizes natural pigments. It can also be used in starch production, often in combination with other condensed phosphates. Generally added at 0.5-3‰ in food processing and up to 3% in seafood processing.
