Anhydrous pyrophosphate potassium is a white powder with a relative density of 2.534, melting point of 1109°C, readily hygroscopic and deliquescent, soluble in water but not in ethanol. At 25°C, 187 grams dissolve in 100 grams of water. It can form chelates with alkaline earth and heavy metal ions.
Application:
(1) Primarily used in cyanide-free electroplating, industrial and household detergents, as a buffering agent and hydrogen peroxide stabilizer. It can also be used as a dispersant for ceramics, clay, latex, and pigments. (2) In the food industry, it serves as an emulsifier, tissue modifier, and chelating agent, and is also used as a base for alkaline water in baked goods, often blended with other condensed phosphates. Typically, it prevents the formation of avian fecal stones in canned seafood, prevents browning in canned fruits, enhances the expansion of ice cream, improves the yield and water retention of ham and sausages, and improves the taste and yield of noodles while preventing cheese from aging. Dosage in food processing: 9g/kg for processed cheese (by phosphorus), 3g/kg for luncheon meat (by P2O5), and 5g/kg for frozen shrimp (by P2O5).
