Dried Mango
The mango flesh is juicy and delicious, blending the flavors of peaches, apricots, plums, and apples. Enjoying a few during the height of summer can refresh the throat, quench thirst, and soothe the spirit. Due to the difficulty in preserving and transporting mangoes, they are often processed into products like syrup canned mangoes, candied fruits, fruit wine, dried fruits, jam, and jelly.
Quick-Dry Mango Drying Process
Selecting ripe and fresh mangoes, such as Luzon mangoes or locally wild mangoes from Hainan, is ideal for processing due to their good color. First, the flesh needs to be thick to increase the yield rate. The ripeness of the sugars should be around 8-9%, as under-ripe mangoes have poor flavor and over-ripe ones are prone to spoilage.
Wash the mangoes by placing them in a flowing water trough and cleaning each one individually. Further remove any unqualified fruits, then sort them by size and place them in plastic baskets, allowing them to drain.
The fruit is manually peeled and sliced using stainless steel knives, with the outer skin removed and blemishes trimmed off, ensuring a smooth surface with no sharp edges. The outer skin must be completely removed, as the peel contains a high amount of tannins, which, if not fully peeled, can easily cause browning during processing, affecting the final product's color. After peeling, the fruit is sliced longitudinally with a sharp blade, with a thickness of approximately 8-10mm. The remaining fruit flesh around the seeds can be processed into puree or juice.
Color retention treatment is done through fumigation or immersion methods.
The raw materials, after color protection treatment and being evenly placed on the drying rack (drain the moisture first for soaked materials), are then dried in the oven.
Initial drying temperature should be controlled at 70-75°C, with later stages at 60-65°C. Pay attention to operations such as flipping and re-humidifying during the drying process.
