Microwave heating technology is a new method of heating. It relies on microwaves, which penetrate the material at a rate of 24,500,000 cycles per second, interacting with the material's polar molecules. After the polar molecules (such as water molecules) absorb microwave energy, they change their original molecular structure and move at the same speed in the electric field, causing frequent collisions and generating a large amount of frictional heat. This results in all parts of the material being heated uniformly at the same instant, thereby increasing the temperature. Since the thermal effect of the medium under microwave radiation is an overall internal heating, known theoretically as "temperature gradient-free heating," there is basically no heat conduction phenomenon within the medium. Therefore, microwaves can heat the medium quite evenly. Compared to traditional heating methods, microwave heating technology has the following characteristics:
1. Fast drying speed and short drying time: Conventional heating requires heating transfer mediums and the environment, and then entering the food, thus requiring a longer time to reach the desired heating temperature. In contrast, microwave heating directly absorbs microwave energy by the object, significantly faster than conventional methods, where the entire heating and drying process can be completed in just one-tenth to one-hundredth of the time required by conventional methods.
2. High product quality is maintained due to short heating times and non-thermal effects, thus preserving the color, aroma, and flavor of the processed materials with minimal destruction.
3. Uniform Heating: Traditional heating heats the food surface first, then transfers the heat to the inside through conduction, whereas microwave heating simultaneously heats both the surface and the inside of the food. This results in more even heating, avoiding the common issues of overcooking on the outside and undercooking on the inside that can occur during conventional heating, thus enhancing product quality.
