Toughness biscuit equipment:
Toughness biscuits, also known as springy dough biscuits, are made from dough that requires fermentation. We recommend using a layering machine along with 3-4 sets of rolling pins and a roller cutter for production. This results in crisp biscuits with a smooth, even surface and a layered interior, like soda biscuits, animal biscuits, crisp biscuits, and finger biscuits, etc.
Equipment Principle: After the dough is kneaded and fermented, it goes through the optional layering machine, then the three-roll feeder, followed by three roller calendering machines, and is cut into shape through mold roller cutters. The excess dough is returned to the first feeding machine via a biscuit skin separator. The shaped biscuit dough is then sent to the next baking equipment.
Crisp Biscuit Machinery
Crunchy cookies are made from a higher fat content, low-gluten flour, and sugar. These cookies have a crispy texture due to the minimal gluten development during the dough preparation, offering good plasticity and adhesion. Therefore, we recommend our customers use roller printing machines to enhance the cookies' patterns and fun appeal. Common types include Peach Crisps, Oreo, Oatmeal Cookies, Caramel Butter Cookies, and more.
Equipment Principle: After the dough is shaped horizontally, it is directly conveyed to the crisp molding machine where it is roller-embossed. The bottom of the conveyor belt features rubber rollers to enhance the grip between the mold roller and the conveyor belt, ensuring better imprinting and shaping of the biscuits with minimal waste. The biscuits can then be sprinkled with salt and sugar before being sent to the oven for baking. Typically, the baking time required is shorter than that for flexible biscuits.
