Weishan Lake white lotus root ripening period: August

Rhizome stems measure 5 to 12 cm. Lotus stems can reach 2.3 meters in length, weigh approximately 25 catties, and have an average length of around 1.5 meters. The dried lotus can be about 3 meters long, with the stalks being around 3 cm in diameter. After removing the small tail sections, the lotus tubers are as white as jade, with consistent color inside and out. When broken, the断面 is clean and translucent, with a milky sap oozing out. They are sweet and crisp when eaten raw, with a good texture and high sugar content (native lotus is sugar-free), containing up to 30% starch. They can be eaten raw like fruit, offering a unique flavor.
