Under constant total starch content, mixing these starch dispersions in different ratios and reacting them with iodine at specific wavelengths and acidity levels produces a range of colors from purple-red to deep blue, indicating varying proportions of linear and branch starch. The linear relationship between absorbance and linear starch concentration allows for the determination of linear starch content.
