Modified Atmosphere Storage (MAS) is a shorthand for gas composition regulated cold storage, and it is one of the fruit and vegetable preservation methods in recent years. MAS can artificially control the proportions of nitrogen, oxygen, carbon dioxide, ethylene, and other components in the gas, as well as factors like humidity, temperature, and pressure. By suppressing the respiratory rate of stored items, it slows down their metabolic processes, putting them into a dormant state. This allows for the long-term preservation of the quality, color, texture, and nutrition of the stored goods, achieving long-term freshness. It also extends the dormancy recovery period after the produce is placed on shelves, maintains better quality through a longer shelf life, reduces spoilage, and increases profits. The temperature range of MAS is -5℃ to 15℃.
Chilled storage with modified atmosphere features:
Retain the original flavor of the food while minimizing nutritional loss.
2. The controlled atmosphere storage has deoxygenation capabilities, maintaining a balanced ratio of carbon dioxide and nitrogen, filtering ethylene (a natural ripening agent found in fruits), allowing for extended storage time and enhanced preservation effects.
3. A controlled atmosphere storage with a humidification system can minimize water loss in fruits and vegetables, thereby maintaining their color and texture. This not only reduces food storage losses but also preserves the original quality of the food.
4. By adding ozone generators and other equipment, the controlled atmosphere storage can also possess antibacterial capabilities, which not only extends the preservation time and ensures non-contamination, but also prolongs the shelf life after the food is removed from storage, increasing both the sales time and the quality of the product.
