Operation Guide


Mix the dough: Pour the flour into the mixer, then add water according to the regulation of about 25%, start the mixer, and mix the flour and water evenly until it reaches a granular consistency (for use after 10 minutes).


2. Adjustment: Adjust the roller gap using the handwheel. The reference data for each roller gap group is: (exception for units above 330). During the adjustment process, the amount of tightening or loosening the handwheel may not be accurate at first, the key is to understand the principle, be patient, and if not proficient, stop the machine for adjustment. Once normal, lock the handwheel securely.


3. Operation: Place the mixed flour into the hopper, press the knife and secure the blade guard, then start the machine. The panel from the third group needs to be manually guided to the next group (repeat for multiple groups). Operation complete.


Common Malfunctions


Is the panel not connecting properly?


Improper adjustment of roller gaps can lead to broken sheet and excess sheet phenomena, such as the previous panel being thin and the next panel being thick. When the demand for the next panel is high, it will result in broken sheets; conversely, there will be excess sheets. Following this logic, when adjusting roller gaps to prevent broken sheets, reduce the gap between the lower roller set to achieve evenness.


Are the edges of the panel or both sides of the panel uneven in thickness?


It is due to uneven gaps at both ends of the roller, so adjust the roller gaps at both ends to make them even.


3. Panels and noodles in wavy shape?


If the installation angle of the scraper, cutting blade, or comb blade is too great or the comb blade edge is reversed, just adjust them properly.


4. Coated roller for panels?


It's due to excessive moisture in the flour or loose scraper bolts.


Can't separate the noodles?


The blade at the cross-section does not match the base, so just adjust the blade edge to the proper position.


6. Noodles breaking?


It's due to impurities in the flour (leftover residue from the last mixing bucket) or uneven mixing.

Safety & Maintenance


Operator should carefully study the manual before use and strictly follow the instructions provided.


Do not reverse the machine.


3. Check for any abnormal conditions before turning on, and address any issues promptly to avoid accidents.


4. Prevent iron or other hard materials from mixing with the flour to avoid damaging the machinery.


5. Return noodles should not be directly poured into the noodle bin.


6. Absolutely no hands allowed in the danger zones such as rollers, gears, chains, cutting blades, etc., while the machine is running.


7. Ensure lubrication of all rotating parts; check oil levels, oil cups, gear and chain oil holes. Refill with 20#-30# engine oil twice per shift. After each shift, apply a small amount of edible oil to the surface of the cutting tool and roller.


8. The clutch of the single head (60, 100 models) roller mill and pasta mixer must be engaged only when the machine is stopped.


9. Pre-pressing: Run the machine for 10-15 minutes before pressing. During winter production, maintain the indoor temperature above 10-15 degrees Celsius.


10. Maintain the cleanliness of the machinery after shutdown, ensuring no remnants or face blanks are left in the rolling rolls.


11. Maintain lubrication for all gears and rolling bearings.


12. Absolutely no foreign hard debris allowed to fall into the roller or gear.


13. Replace bearing grease every six months.


14. Absolutely no operation with face roller gap adjusted to 5mm or more.


MTT Stripper Usage Instructions


A noodle picking machine is a machine that stacks formed noodles onto a rod and hangs them in space, serving as a配套 equipment for the noodle production line.


Installation Instructions


Align the base of the picking machine with the holes on the front leg of the hanger machine, connect with M10 replacement bolts, and adjust to the center.


2. The cutting head of the noodle machine and the bottom shaft of the noodle separator are connected by the chain supplied with the main unit, and are tightened with an adjusting wheel.


Adjustment Method:


Before operating the machine, it must be adjusted to ensure the noodle length is centered and perfectly rests on the lifting rod.


Method: Prior to startup, manually pull the chain hook to align the left and right hooks symmetrically. Then, turn on the machine to test the noodle rolling. Stop the machine and pull the chain according to the length of the noodles hanging. Adjust until the noodles rest perfectly in the middle of the noodle rod with the bottom aligned.


Production Line Configuration


1. Mixing System


The equipment consists of a flour elevator, flour conveyor, brine mixer, dough mixer, and electrical control cabinet. It quantitatively controls the delivered flour and mixed brine, forming an atomized state, which makes the dough pieces loose and evenly moist and dry.


2. Pasta and noodle cutting system


The熟化机、复合机、压延机、切条机、给杆机、挑条机 six sections are integrated to complete the noodle shaping stage. The mixed dough is matured for 10 minutes, stirred to allow the flour to fully absorb water and puff up to form a wet gluten network, then sent to the compound machine where two sheets are simultaneously made and pressed into one. After that, it undergoes four-level roller pressing at a pressure ratio that does not damage the gluten structure to produce sheets 0.8~2 mm thick. The properly pressed sheets are then cut into wet noodles of 0.8~3 mm thickness by the cutting blade. The noodles, cut to 2400-2600 mm in length by the automatic feeding machine, are elevated to the overhead parallel chain by the pickling machine.


3. Automatic Tail End Trimming Device for Shelves


Composed of lifting, pole raising, tail-end trimming, and control cabinets. Wet noodles hanging on a steel pole are lifted to the starting point of the drying room operation, controlled by an infrared integrated circuit, and synchronously hung on the hoist of the movable drying unit. The tail-end trimming machine is installed at the pre-drying starting point, with the trimmed noodle ends recycled for use immediately. As the noodles are pre-cut to a certain length before entering the drying process, the amount of dried noodle ends is significantly reduced.


4. Drying System


Composed of a main drive for the drying operation, steel wire rope, chain hoisting equipment, steel structure cooling fans, exhaust fans, steam heating pipes, sensors, humidity and temperature detection and control instruments, and electrical control cabinets. The mobile steel wire rope hoisting features variable speed control, transporting the noodles into three drying zones at a rate of 10-14 poles per minute. Zone 1 applies cold air to set the noodles, preventing elongation and rapid surface drying; Zone 2 maintains humidity and sweating, achieving high-temperature and high-humidity drying to spread moisture within the noodles and control the surface dryness; Zone 3 cools and dissipates heat, slowly drying the finished product.


5. Discontinued Sliced Product System


Composed of de-stackers, straighteners, slicing machines, and control cabinets, the noodles, as straight as a line, are removed from the hooks by chains after a 4-5 hour drying process. They are then fed into the slicing machine, cut into segments of 240mm (length adjustable), and packaged into attractive, cost-effective products in 250g and 500g sizes.
