Flexible Cookie Equipment
Resilient biscuits, commonly known as doughy biscuits, are made from dough that typically requires fermentation. We recommend using a stacker machine along with 3-4 sets of roller and cutting machines for production. This method results in biscuits with a crisp texture, a smooth and even surface, and a layered cross-section, such as soda biscuits, animal biscuits, crisp biscuits, and finger biscuits, etc.
Equipment Principle: After vertical/horizontal shaping and dough/fermentation, the dough is passed through a layering machine (optional), a three-roll feeder, and then through a three-roller skin machine, where it is cut into shape by mold rollers. Any excess dough skin is then sent back to the first feeding machine via a cake skin separator. The shaped biscuit dough is then transferred to the next baking equipment.
Crisp biscuit making equipment:
Crisp biscuits are made from a higher fat content, low-gluten flour, and sugar. These biscuits have a crispy texture, forming less gluten during the dough mixing process, which gives them good plasticity and adhesion. Therefore, we recommend our clients use roller printing machines, which can enhance the patterns and fun aspects of the biscuits. Common biscuits include: Peach Crisp, Oreo, Oatmeal Cookies, Caramel Butter Cookies, and more.
Equipment Principle: After the dough is rolled horizontally, it is directly conveyed to the crisp molding machine for roller embossing. The conveyor belt bottom features rubber rollers to enhance the grip between the mold roller and the conveyor belt, ensuring better printing and shaping of the biscuits with no excess waste. The biscuits can then be sprinkled with salt and sugar and directly enter the oven for baking. Typically, the baking time required is slightly shorter than that for flexible biscuits.
