This process releases part of the linear starch to form a sticky substance. Subsequently, mechanical and physical actions break down the protein structures bound to starch in corn, exposing the starch granules and altering the protein structure of corn [1]. The process involves dual steps of steam heating and mechanical rolling to process raw corn, altering its chemical composition and physical form. This facilitates the exposure of starch granules and the destruction of the outer seed coat, thereby improving the utilization of corn. The corn is then made into thin slices with density and thickness, a technique known as steam pressing technology.
