Modified Atmosphere Packaging (MAP) machines place food into pre-made boxes, then remove the air inside using a positive pressure system. A mixer fills the box with gases in specific proportions (mainly nitrogen, carbon dioxide, and oxygen). After sealing, this packaging preserves the food's color, texture, and flavor without alteration, keeping it in a dormant state. Nitrogen and carbon dioxide inhibit certain bacteria, while oxygen aids in preservation, ensuring the product retains its original taste.
