Spray drying is a device used to obtain powders in the food industry. It is widely used in the industrial production of fruit and vegetable juice powders. Spray drying involves converting raw materials into liquid or paste form dry powder. The feed is atomized into the drying chamber, where it is mixed with a spray of hot air and the spray-dried particles evaporate. The powder produced by spray drying is of great concern due to its long shelf life of liquids, ease of handling and transportation, and reduction in packaging volume or weight. The quality characteristics of spray-dried products depend on spray drying conditions, including the air inlet temperature, feed flow rate, concentration of drying aids, and raw material properties.
However, the spray drying of protease centrifugal spray dryer is related to the issue of material adhesion. In the drying of these food materials by spray, the powder particles stick together, forming a coating on the drying wall, which leads to operational problems and low yield of the product. The sticky behavior is attributed to the presence of low molecular weight sugars and organic acids with low glass transition temperatures. To achieve successful drying, various methods such as using drying aids with higher molecular weights to increase the glass transition temperature of the feed, drying under low humidity and low temperature conditions, scraping the drying surface, and using dried air and surface-modified proteins for packaging sugar-drying cooling walls can be employed.
